Nicolas worked with Jean Yves Bizot until 2021, before he was in the cellars of Boisson Vadot. After completing his school in Dijon, Nicolas finally decided to start his project in the Loire Valley. He is a humble, well-informed and very committed young man. He knows what he wants to do, what he wants to represent and how to change the Loire for the better.
Nicolas treats his vineyards as if they were his garden. They are given a biological approach: natural growth in their environment is encouraged to promote the resilience of vines and create a sustainable ecosystem within them. For both wines the grapes are pressed in whole clusters and spend 20 months in used barrels, without decanting, before being bottled with only a small dose of sulphur.
